For the yeast Palmer recommends WLP833 (German Bock) for a drier beer, or WLP820 (Oktoberfest/M?rzen) for a maltier beer.
MASH
The mash schedule supplied with the kit is rather generic so I asked on the 3b forum about one more specific to this beer. I got an answer that John Palmer recommends a single infustion mash at 152? for 60 minutes.

0.5 oz Norther Brewer Hops added for 60 min
Either WL Hefe(WLP300) or American Hefe(WLP320) depending upon your taste preferences.
