Munton and Fison Ale Yeast
 Munton’s Yeast has very hardy characteristics and will tolerate a wide range of temperature variations during fermentation. For recipes with ingredients consisting of sugar as a source of fermentables, this yeast is very acceptable.
Munton’s Premium Gold Yeast (6 grams)
 Simply requires sprinkling onto the surface of your wort – no need to stir – and the yeast will rehydrate and activate within just a few hours. The yeast has excellent crusting characteristics forming a firm ‘jelly like’ deposit at the bottom of the fermenter and bottle or barrel. Flavor profile is excellent and the yeast has the ability to drop out of suspension very rapidly.
Coopers Ale (7 grams)
 General purpose dry ale yeast with a very good reputation. Produces significant fruity flavors, but no phenolic characteristics. Clean, fruity finish. Ferments between 62 and 72º F.

Safbrew T-58 (10 grams)
Yeast: Safbrew T-58 (Saccharomyces cerevisiae) Properties: A speciality yeast selected for its estery somewhat peppery and spicy flavour development. Sedimentation: medium. Final gravity: high. Also recommended for bottle-conditioning of beers. Excellent performance in beers with alcohol contents of up to 8.5% v/v but can ferment up to 11.5% v/v.

Yeast: Safbrew S-33 (Saccharomyces cerevisiae) Properties: A very popular general purpose yeast, displaying both very robust conservation properties and consistent performance. This yeast produces superb flavour profiles and is used for the production of a varied range of top fermented special beers (Belgian type wheat beers, Trappist, etc.). Sedimentation: medium. Final gravity: high. Also recommended for bottle-conditioning of beers. Excellent performance in beers with alcohol contents of up to 7.5% v/v, but can ferment up to 11.5% v/v.
Safale Ale S-04 Whitbread Strain (11.5 grams)
Yeast: Safale S-04 (Saccharomyces cerevisiae) Properties: A well-known, commercial English ale yeast, selected for its fast fermentation character and its ability to form a very compact sediment at the end of the fermentation, helping to improve beer clarity. This yeast is recommended for the production of a large range of ale beers and is specially well adapted to cask-conditioned ales and fermentation in cylindro-conical tanks. Sedimentation: high. Final gravity: medium.
Safbrew WB-06
This dry wheat beer yeast is a specialty yeast selected for wheat beer fermentation. The yeast claims to produce subtle ester and phenol flavors – notes typical of wheat beers. Sedimentation is low, and leaves the gravity on the high end of the range. Ideal fermentation temperature ranges from 59-75°F. 11.5 gram package.
Safale US-05 (11.5 grams)
Yeast: Safale US-05 (Saccharomyces cerevisiae), formally US-56 Properties: A ready-to-pitch dry American ale yeast. Safale US-05 produces well balanced beers with low diacetyl and a very clean, crisp end palate. Sedimentation: low to medium. Final gravity: medium.
Safale K-97 (11.5 grams)
A German ale yeast selected for its ability to form a large firm head when fermenting. This top cropping ale yeast is suitable for top fermented beers with low ester levels and can be used for Belgian type wheat beers.
Saflager S-23 (11.5 grams)
Yeast: Saflager S-23 (Saccharomyces cerevisiae) Properties: This bottom fermenting yeast is originating from the VLB (Berlin) in Germany and is known under the code RH. The strain is used by Western European commercial breweries and has been reported to produce lagers with some fruity and estery notes. Sedimentation: high. Final gravity: medium.
Danstar Munich German Wheat Beer Yeast
Munich German Wheat Beer Yeast: Originated in Bavaria is used by a number of commercial breweries to produce German-style wheat beers. Quick start and vigorous fermentation, which can be completed in 4 days above 17°C/62°F with medium to high attenuation. Fermentation rate, fermentation time and degree of attenuation are dependent on pitching rate, yeast handling, fermentation temperature and the nutritional quality of the wort. Flocculation with this strain is low. In classic open fermentation vessels, the yeast can be skimmed off the top. Some settling can be promoted by cooling and use of fining agents and isinglass. Aroma is estery to both palate and nose with typical banana notes. Does not display off-odors when properly handled. Munich yeast has found widespread use in the production of German Weizen and Hefeweizen. Munich yeast is best used at traditional ale temperatures after rehydration. Gluten and GMO-free. 11 gram package.
Lallemand Nottingham Ale (11 grams)
This high flocculating yeast strain will ferment to near full attenuation. Its neutrality allows it to be used in a wide variety of styles, as it allows the true flavor of the malt to come through. Also ferments well at lower temperatures, down to 57 degrees Farenheit, so it may be used to brew lager-style beers. Ferments between 57 and 70 degrees.
SuperStart Distiller’s Yeast (DADY) (1 lb. bulk pack)
SuperStart Distiller’s Yeast (DADY) Alcohol tolerance to 22% (1 lb. bulk pack): Ferments up to 22% before slowing. Use nutrients to obtain the highest alcohol level prior to distillation (which of course is NOT legal as a beverage!). Usually not used for wines or beers. Sufficient yeast for approx 500 gallons
